I love to bake.  But, when it comes to creating beautifully elaborate birthday cakes, I'm still a greenie.  Yes, practice does make perfect.  But sometimes I just want to take the easier, less stressful route; and when I do, I make Luanne's Bundt Cake.  A recipe that my fabulous Mother-in-Law first got from her friend Luanne (hence the name) and then passed on to me when Dave and I first got married.   Although I am continually working on my cake decorating skills, there are times when I opt to make this simple, yet nirvana inducing cake that always amazes my guests and doesn't cause me to turn into the crazed woman that I often transform into when I attempt to make a cake that is just like one I found on Pinterest or marthastewart.com.

Truly believing that every woman out there should have a handful of life saving recipes that will keep her mentally sanity in tact, I want to share this recipe with you; so, here ya go!





Luanne's Bundt Cake

1 cup softened butter
1 & 1/2 cups sugar
2 eggs
1 tsp. vanilla
2 cups flour
1/2 tsp baking soda
1 & 1/2 tsp. baking powder
1 cup sour cream

2 tsp. cinnamon
2 tsp. sugar




1-Beat butter, sugar and eggs until fluffy and light; then add the vanilla.

2-Mix dry ingredients together.

3-Add part of the dry mixture and all of the sour cream into your butter, sugar, and eggs mixture; mix well.

4-Add the remainder of your dry mixture and mix well, again.




5-Grease and flour your bundt cake pan.

6-in a small bowl, mix together your cinnamon and sugar and set aside.

7-Put half of your cake batter into your bundt pan and mix part of your cinnamon sugar mixture into the batter that you just placed in the pan.

8-Add your remaining batter to the pan and mix into it the remaining cinnamon sugar mixture.

9- Bake at 350 degrees for 50 minutes (DO NOT PREHEAT THE OVEN!) and then cool completely before removing your cake from your pan.




Once your cake is ready to serve, simply top it off with a dusting of powdered sugar or serve it with my simple raspberry compote and a dollop of whipped cream.  Whether your birthday party goes according to plan, or completely blows up in  your face, at least you can rest easy knowing your birthday cake was the bomb!
