Spring Flower Cupcakes with Sugar Decorations

 Just going to start by saying I don't think any less of you if you don't go to church. In my opinion your beliefs are your own personal journey. At the church I attend, I have the responsibility to help plan activities specifically for the women. If you have been following our blog, then you must know that this is a super fun calling for me. I get to party plan, craft, and work with other talented and giving women. We recently held an activity spotlighting the women of our neighborhood in their golden years. The room was decorated with Victorian style antiques and elegant fresh flowers.

We laughed and felt sorrows with them as they told stories from their lives. One woman shared that through all hardships in her life, she is always seeking to grow from them. This was illustrated as she told of her experience of losing her daughter to cancer. Even through that hardship she expressed her desire to learn. How inspiring! There is so much to glean from the women around us.

 Every good event must have good desserts. Two long tables were filled with an array of super scrumptious desserts. It was a good night filled with friends, memories, and yumminess. How could it not be since cupcakes and cakes were involved? This is what I brought to the event, spring cupcakes with sugar leaves. FYI I cheated. I used box cupcakes and store bought frosting. Here's how you can make some spring inspired cupcakes.

Spring Flower Cupcakes
  • 1 box of your choice of flavor of cupcakes (or homemade)
  • 1 package of cream cheese or vanilla frosting  (or homemade)
  • 24 sugar leaf decorations (directions below)
  • red/blue food coloring
How to Do It:
  1. Bake the cupcakes as directed on the box.
  2. Mix the frosting with 4 drops of red food coloring and 2 drops of blue. This should turn the frosting a pink color.
  3. Once the cupcakes are cooled you can now frost the cupcakes. I used a 2D Wilton tip to frost the cupcakes. To get the swirly affect you will want to start on the outside and swirl inward. See the illustration to the right.
  4.  Next add the pink pearls and green sugar leaves as embellishments.
Sugar Decorations 
  • 1/2 cup sugar
  • water
  • green food coloring
  • small leaf shapes cookie cutter or table knife
  • large zip lock bag
  1. To make the leaves you will want to measure and pour 1/2 cup of sugar into the zip lock bag.
  2. Next add about 3 drops of green food coloring to the bag. It may not look like enough but wait until you mix it to add more.
  3. Zip up the bag and shake that bag like crazy. You will notice the color starting to disperse through the sugar. You want to shake the bag until the color is evenly dispersed and there are no longer any clumps. At this point you could add a drop or two is you'd like a darker color.
  4. Once you have the color you'd like, you repeat this process only using water. So add a 1-2 teaspoons of water to the bag and shake! The ideal consistency is if you formed a ball with the sugar it would almost stick.
  5. Next you will want to lay the sugar mixture on a flat surface. Flatten the sugar by using a rolling pin or bottom of a measuring cup.
  6. You will next cut out your shape either using a small cookie cutter or butter knife. Once you are done, let them dry and harden. I let mine sit overnight.
  7. Once they have hardened they will be a little fragile but strong enough to stick in your springtime cupcakes.
Don't these cupcakes scream, "It's spring, it's spring! Hooray!"? It has been pretty warm where I live too. I am so excited to open the windows and air my house out. I also cant wait to start on my garden. Sadly, the next two weeks for me are extremely busy. My in-laws are coming in to town on Friday morning for a wedding and baby blessing.
