We only eat this meal about once a year. Not for any particular reason, we just like to keep with the tradition! 

Let's get right to it, shall we? 

What you will need:

1 small bag of mini carrots
1 onion diced
1 bay leaf
1 tsp allspice
1 shallot clove diced
6 small potatoes quartered
2 tbs thyme
1 large corned beef brisket 
1 pickling spice packet (comes with the corned beef)
1 cabbage cut into 8 wedges 
2 tbs mustard seed
2 tbs ground peppercorns
2 tbs whole peppercorns
3 cups of water

Start by pouring 3 cups of water into the slow cooker. Now load all of your spices into your along with your onion, bay leaf & shallot. At your fresh ground pepper until the end. Let this simmer inside the pot by themselves for an hour & a half. I always like to start with a good stock or broth. There are so many different flavors in this recipe. So if you dump all of the ingredients into the slow cooker all at once, you'll only taste certain flavors where you place them! 

After simmering your stock, throw in half of the cabbage wedges, half of the potatoes & half of the carrots. 

Poke holes into your corned beef. (About 8 of them) Then toss that baby into the bath with the rest of the kids! Add the rest of your veggies on top. Next, take a turkey baster & spray the stock onto the meat & vegetables. Make sure you do this a few times while it cooks. 

Set the slow cooker to low & cook it for about 4 hours. It seems like a long time, but it is a tougher meat. It needs to be "babied" before it's tender enough to enjoy.
