With the New Year approaching, I have frequently found myself pondering over what I would want my main resolution to be for 2014.  After much deliberation, I decided that I should focus on acquiring more healthy eating habits into my life.  Sure, I'm pretty good at eating things in moderation and doing my best to not eat a huge bowl of ice cream (my Achilles Heel) for lunch every day; but, I know I could do better.  Plus, now that I have three chickies ages 3 and under, I know that I need to be at my physical best to keep my little crazies safe, entertained, and cared for.  And that alone, is reason enough for me to kick my booty into gear.

Over the past couple of weeks, I have slowly been gathering more health friendly recipes and came across a muffin recipe that sounded simply delicious.  However, I was hesitant to make them at first because we take breakfast pretty seriously in my nest; and I knew that if these muffins weren't up to par, I would have a mutiny to deal with.  So, after a little internal pep talk, I gathered up my courage and whisked up a batch of these babies, and some waffles just in case, to present to my chickies.

Sure enough, they were a HUGE success.  So much in fact, that Gus has begun to request them quite frequently.

So, whether being healthy is in your 2014 resolution line up or not, you simply must try making, and eating, these muffins.

Banana Oatmeal Muffins

Ingredients:
1/3 cup butter or margarine softened {I used butter}
 1/3 cup of sugar
2 eggs
2/3 cup of rippened mashed bananas
1/3 cup of honey
dash or two of vanilla
1 tsp. of cinnamon
1 cup of all-purpose flour
2/3 cup of quick rising oats
3/4 tsp. baking powder
3/4 tsp. baking soda
1/2 tsp. salt
Directions:
1. Preheat oven to 350 degrees
2. Beat softened butter and sugar together.
3. Add eggs, honey, and banana and mix.
4. In a separate bowl mix together all of the dry ingredients {except the cinnamon} and set aside.
5. Slowly add the dry ingredients to the wet ingredients and mix together.
6. Add the vanilla and cinnamon and mix.
7. Place cupcake liners in your cupcake pan, fill the liners 2/3 full, and bake for 18-20 minutes.
8. When done baking, remove from pan and let cool on a wire rack.
